Hokkien mee

Hokkien mee (Minnan: 福建麵 hok⁴-kien³-mi^{n 7}), meaning Fujian noodles, can refer to either of two dishes served in Malaysia and Singapore, both invented by immigrants from Fujian, China.

• Hokkien hae mee is served in Penang and Singapore. It is a dish of egg noodles and fine rice noodles in a fragrant prawn and pork stock. It is garnished with prawns, pork ribs, squid, vegetables, crisp deep-fried shallots, fresh lime and sambal.

• Hokkien char mee (Fujian fried noodles) is served in Kuala Lumpur and the surrounding region. It is a dish of thick yellow noodles fried in thick dark soy sauce and pork lard which has been fried until its crispy.
