Caciocavallo

Caciocavallo (Albanian: KaƧkavall; Bulgarian: Кашкавал (Kashkaval); Romanian: Caşcaval; Serbian: Kačkavalj; Sicilian: Cascavaddu; Turkish: Kaşar) is a type of cottage cheese made out of sheep's or cow's milk, originally produced in Sicily, Italy, but now spread all across the Balkans, especially in Romania, Bulgaria, Serbia, Hungary, Turkey, Greece, Slovenia and Croatia.
The Italian name of the cheese Caciocavallo means "Cheese on horseback" and it is thought that it was originally made out of mare's milk.
